Slow roast ~ grass fed ~ dry aged
Our shoulder of mutton comes from lamb that is at least 2 years old at slaughter, sometimes up to 7 years. This is what makes mutton so full of flavour. This also makes the meat easier to cook! It is much more robust and holds up well to long slow cooking, so you can't really go wrong as long as the temperature is not too high.
Great with a North African theme, Harissa or Ras al Hanout, a curry or with big veg, leek, beetroot, swede. This meat has been long forgotten, let's bring it back!
