Lamb
We have one or two trusted sheep farmers who provide us with our delicious new season lamb, hogget and mutton. These traditional-breed animals are reared with a truly sustainable approach and the highest welfare standards, resulting in a pasture-fed lamb that is second to none - succulent and tender and raised entirely on the rich, varied pasture and wildflower meadows of this quiet corner of Suffolk.
We always hang our lamb for at least a week, which enhances its flavour and really helps the texture and tenderness. We take great care with our excellent hogget and mutton: hogget we hang for two weeks, and our Mutton we hang for four weeks.
