Free range ~ lightly smoked ~ easy to carve
This delicious gammon comes from one of our Heritage Breed Free-Range pigs and has been traditionally Wiltshire cured then lightly smoked over beech and oak.
A gammon joint is ideal for a special occasion - a whole gammon would feed up to twenty people.
Place your gammon in a large saucepan and cove with water, add a bay leaf or two and perhaps some peppercorns.
Bring to the boil, then change the water to fresh cold water and bring to the boil gain, leave to simmer until nearly cooked, about an hour for the half and two for the whole.
Remove from the water and cut off the skin leaving the fat in place, then add a marinade of your choice, honey mustard for example and then place in a hot oven until cooked,
Rest for half an hour then carve and enjoy.....
Once cooked the ham would last for a week or two in your fridge, if you can resist it that long. Great value and delicious.
